Durian Snowskin Mooncake
















Ingredients:
Fried Glutinous powder - 300g
Icing Sugar - 300g
Shortening Oil - 100g
Water - 150g 
Banana Essence (Use Durian Essence for this mooncake)
Melon Seeds - 300g (Omit in this mooncake)
Lotus Seed Paste - 1500g (Use Durian Flesh for this mooncake)
Hong Kong Flour - 2 tbsp (Optional: Fried)

Method:
  1. Sieve glutinous powder, icing sugar and Hong Kong flour
  2. Melt shortening with water together with the colouring.
  3. Mix the dry ingredients.
  4. Mix the essence with the liquid mixture.
  5. Make a well in the centre of the dry ingredients and pour in liquid mixture and knead into a smooth dough.
  6. Put the dough into the fridge for 30 minutes.
  7. Mix the melon seeds and Lotus Seed Paste.
  8. To check the weight of the mould, roll the filling with some flour and press into mould. (For example:Weight of the mould is 50g, 20g for skin, 30g for filling
  9. Ensure the hand is dry and clean.
  10. Roll the filling into a round shape.
  11. Take the dough out from the fridge and knead it again.
  12. Press the dough flat on some flour and then wrap it with the filling .
  13. Press them in the mould.
  14. Knock out the mooncake and it's ready for eating.
If mould is 35g, use 20g filling and 15g skin.
